Local Flour Spelt Brownies

1 cup unsalted butter
1/2 cup cocoa powder
1 cup sugar
3 large eggs
1 teaspoon vanilla
2 teaspoon dark rum (optional)
1/2 teaspoon baking powder
3/4 cup Daisy Whole Grain Spelt Flour
1/2 cup dark chocolate chips or chunks
1/2 cup toasted nuts (your preference, optional)
Preheat oven to 325° F.
In a small bowl, combine flour, baking powder & cocoa powder together.
In the bowl of an electric mixer, beat butter & sugar with a paddle attachment for 2 minutes until creamy.
Add the eggs, one at a time. Once combined, next add vanilla & rum. With mixer on low, add the dry ingredients to the bowl, making sure not to over mix.
Once combined (lumps are OK), add chocolate chips and nuts (if using) with a spatula and mix a few times (over mixing dough will yield a cakey brownie that will easily fall apart when you cut it).
Pour batter into a greased 8x8 pan.
Bake for 30-40 minutes until a toothpick comes out clean. Make sure not to over bake these, as you want them to be fudgy!
