Flour and Water......Just Plain Dough.......the first step in making

Seitan. We're passionate about Seitan (wheat-based pure
protein). as a vegan or vegetarian entree.
You may be thinking "Have I kneaded this dough long enough?"'
If you have ever asked yourself this question, then study this
image. When dough has been kneaded long enough for the
gluten to be developed, you will see a transparent windowpane
when it is all stretched out. Look at the right side of the
photo where the Seitan dough is stretched out and transparent.
